Ayam Masak Briyani & Acar Rampai

Yesterday i voluntered to cook 2 dishes and bring it to my parents. I made 'Ayam Masak Beriyani' and 'Acar Rampai'. All from the Mami recipe book which my anty from Kuching recommended.

The recipe is easy. For chicken, it doesn't use coconut-milk and the 'acar-rampai' is loaded with vege & shallots & garlic which i loike.

I will give the recipe in bahasa melayu (as the book is in bahasa melayu), i'm too lazy to do translations, hehehe.

Ayam Masak Beriyani
Bahan- bahan :

1 ekor ayam - dipotong & dibersihkan
Kalau daging 600gm - dipotong 4
3 biji tomatoes ] dihiris
2 biji cili hijau ] dihiris
2 senduk minyak masak
1 sudu makan minyak sapi
1/2 cawan susu cair (kalau nak guna santan pun boleh)
1 sudu teh gula pasir
1 helai daun pandan
15 ulas bawang merah (dibuat bawang goreng)
1cm kulit kayu manis ] bahan penumis
3 biji buah pelaga ] bahan penumis
3 kelopak bunga lawang ] bahan penumis
3 ulas bawang merah - dihiris
Sedikit daun pudina
Sedikit daun ketumbar

Sedikit serbuk perasa & garam secukup rasa

Bahan-bahan (A) dikisar :-
1 1/2 sudu makan rempah kari daging
1 1/2 sudu teh rempah beriani
8 ulas bawang merah
5 ulas bawang putih
10gm halia

Cara Membuat :-

Panaskan minyak sapi dan minyak masak dlm periuk. Tumiskan bwg merah yg dihiris hingga kuning. Masukkan bahan penumis dan dikacau rata.


Kemudian masukan bahan (A) dan dikacau hingga rata. Bubuh air sedikit-sedikit sambil dikacau hingga haring dan berbau wangi.

Masukan ayam, tomato dan cili hijau. Kacau selama 2-3 minit. Kemudian masukan 2 1/2 cawan air dan masak lagi hingga ayam lembut.

Kemudian masukan susu cair, garam, serbuk perasa dan gula pasir. Kacau rata. Masukan pula daun pudina, bawang goreng dan daun ketumbar.


Masak hingga kuahnya pekat. Tutupkan api.

This is how it turns out to be. It can be better, i need lotsa practise to make tis dish to be perfect.


Acar Rampai


Bahan-bahan :
1 biji timun - dipotong 1 1/2cm & dihiris kasar
1 biji lobak merah - dipotong 1 1/2cm & dihiris kasar
2 biji cili merah - dibelah 2 & dihiris panjang
2 biji cili hijau - dibelah 2 & dihiris panjang
2cm halia - dihiris
8 ulas bawang merah - dibelah 2
8 ulas bawang putih - dibelah 2

Semua bahan di atas direndam dgn air kapur selama 30minit. Tapiskan airnya.


1/2 cawan cuka untuk masakan
4 sudu makan minyak masak
2 sudu makan gula pasir
1 sudu makan biji sawi
3/4 sudu teh kunyin serbuk - dibancuh sedikit air
Garam secukup rasa

Cara Membuat :-
Panaskan minyak dlm kuali. Masukan biji sawi dan goreng sekejap.
Kemudian masukan bancuhan serbuk kunyit dan goreng sekejap.
Seterusnya masukan cuka, gula pasir dan sedikit garam. Kacau hingga rata.

Akhir sekali masukan semua bahan yg direndam tadi. Gaulkan hingga rata di atas api dan angkat.

Surprise belated birhtday cake

On Sunday, my family and i planned to give a birthday surprise to cuzin F. After her mom passed away, we know she hasn't been so happy especially with family problem n all. We'd thot we'd cheer her up. But on a very small scale cos we know she's anti-social (sorry cuz, i'm saying what's facts, hehehe)....and she don't fancy crowd.

I sent her a text mesej d nite before, to meet up for dinner. Not knowing to her that my mom n me planned to make some home-made dishes.
Mama cooked her delicious 'gravy crab', veges & ayam. And since i know she's a bit of a 'jakun' (sorry again hoh) cos she has very limited food preferences...i made some 'dendeng' telor/takua. For dessert, i made 'sago-gula-melaka'.

My bro and his wife sponsored satay. I'm suppose to fetch cuzin F but i told my bro to fetch her instead....and then do some acting which my sis-inlaw happily obliged. They told cuzin F that they're suppose to stop-by my mom's place to take her wallet. When they all drop-by the house, my mom and i had oredi prepared a birthday cake for her, light the candles, off-d lights and sang her a birthday song as she was about to enter the house......i tink it touches her heart...it touches ours too. I hope your mummy can see u.

We adjourned for dinner and later supper and chit-chat till late nite. During supper, we had the cake-cutting n cuzin F insists that we cut d cake with her. I said the celebration was low-key cos we're in our house-comfy clothes.

I cooked on friday

Hey...its a big deal for me okey. In my very stressed time in d ofis, i had time to cook last nite. But it was a simple dish....healthy one i hope...hehehe

I juz saute some garlic & shallots, put is some chicken breasts (which has been sliced) and put in water. Let it boil and put in potatoes. In another pot, boil macaroni till cooked. Once boiled, put in macaroni and brocolli. Salt to taste. No MSG and no chicken granules. Juz plain soup.

Before serve, put in fried shallots (which i make myself) and chopped spring onion. Thats all for dinner. Actually huby requested for this dish...its my first time making it. Taste okeylah.

Home-made Fish & Wedges for Lunch

Today is our santai day. Altho we had roti-canai for breakfast this morning but i decided that we eat some lite home-made food today. Fish & Chips but with potato wedges & salad.

Tis is an easy recipe, from the "Better Homes and Gardens - New Cook Book". All you need for your fish batter are :-


1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup beer or milk (in tis case, surely lah i use milk)



Thaw fish, rinse and pat dry with paper towels. Cut fish into 2 or 3 serving-size pieces. In the recipe book didn't say this but i marinate the fish with salt and pepper before dipping the fish in the batter (you can do the same). For fish batter, combine flour, baking powder and salt. Add beer or milk, beat till smooth. Dip fish into batter. Fry fish in hot oil, one or two peices at a time, about 2 minutes on each side or till golden brown.

Before the frying d fish, i made my own salad. I chopped some tomatoes, big-onions, some almond slices which i saute (without oil) and some greens and in this case i use 'Romaine' salad (which i took out its core). Place all of it in a salad bowl and mix it together with mayonaise which i mix with a little bit of tomato-sauce. Toss lightly to mix and sprinkle the almond. Simple to make.

Afterwards, i made some potato wedges (please use imported one cos imported potatoes taste much better). I mix it with rice-flour, curry powder and salt. Mix together and fry. Topped it with mayo.....sedap...

This is our simple meal for lunch today. Alhamdulilah, bee said good (a few times)!! Bukan senang nak dapat 'compliments' from him especially about food....so i'm good today...heh...heh...heh...



Tonite i'm meeting my parents & bro/wife at KJ. Hmm...wonder wats...cookin?!!

My attempt to cook butter prawns

Butter prawns happened to be bee's fave. If i'm not mistaken he bought a recipe book for me on this recipe many many years ago. I remembered trying it out two/three years ago...but can't remember how it turn out to be.


Last saturday after lunch, i thot i'd give it a try.


The recipe just needed prawns, butter, egg yolks, evaporated milk, chopped cili-padi and sum curry leaves.




This is how it turn out.... not even close huh!! Bee said 'not there yet'.....huhu...sob...sob... i guess i've to try and try till it becomes perfect.
