Madeleines

Last saturday i gave bee a surprise. I baked him Madeleines....no...not the French ones....d English ones. Yes Madeleines is an English cake that has desiccated coconut as its toppings. Another type of Madelines is a French cake that taste similarly like our local 'bahulu.

Its easy to make. Since i don't have Madeleines original mould, i used a muffin pan instead, with a little bit of creativity, i put the cake in a paper-cupcake.

Ingredient
4 oz butter
4 oz sugar
2 eggs
1/2 level tsp. baking powder
4 oz flour
Red Jam
Desiccated Coconut
Glace cherries and angelica

Method.
Beat the fat and sugar to a white cream and gradually add the eggs and a little of the sieved baking powder and flour, beating well. Stir in remaining flour. Grease 12 dariole moulds, three parts fill them with the mixture and bake in a moderate oven for about 20 minutes, or until firm and browned. Turn out, and trim off the bottoms so that the cakes stan firmly and are of even heights. When nearly cold brush them with the melted jam, holding them on a skewer. Roll each of the coconut (or chopped nuts), dip a cherry in jam, and place it on top, adding two leaves of angelica. (Makes 8-12) Alhamdulilah, bee loves it. Mama & Papa said it wuz oraitlah...hehehe...
